Jessie's Lass-O's

Jessie's Lass-O's

There is so much to see in Toy Story Land at Hollywood Studios. As it is supposed to look like you've become a toy in Andy's backyard, there are giant blocks and toy soldiers, tinker toys and belt buckles, strings of monkeys escaping their barrel and cardboard punch outs, and, of course, toys like Rex, Hamm, Jessie and Buzz. There are also a few fun boxes Andy saved, like this Lass-O's cereal featuring Jessie and the prizes from Toy Story Mania.

The Prospector's Homemade Cheddar Biscuit Recipe From Disney

The Prospector's Homemade Cheddar Biscuits

I finally had the chance to try the Roundup Rodeo BBQ in Toy Story Land in January. The food was really good and I loved the decor. My favorite part was the biscuits. They are absolutely delicious! Disney recently shared the recipe for these biscuits to celebrate the one year anniversary of the restaurant. I can't wait to make them!

The Prospector's Homemade Cheddar Biscuits With Sweet Pepper Jelly - Roundup Rodeo BBQ, Hollywood Studios

Makes 12 Biscuits

Sweet Pepper Jelly
3 large red bell peppers, diced
1/2 cup diced Spanish onion
1 teaspoon red pepper flakes
1/2 cup white vinegar
1 cup sugar, divided
1/2 teaspoon coarse salt
2 teaspoons pectin

Purée red bell pepper and onion in food processor until smooth. Bring puréed pepper mix, red pepper flakes, vinegar, 3/4 cup sugar, and salt to boil in medium saucepan. Reduce heat to simmer and continue simmering, stirring occasionally with rubber spatula, for 10-15 minutes, until reduced by slightly less than 1/3.

Combine pectin and remaining 1/4 cup sugar in small bowl. Add to simmering pepper mix. Stir constantly for 5 minutes until jelly thickens.  Pour into heatproof bowl to cool. Cool at room temperature for 30 minutes. Cover, and refrigerate until ready to use.

Pepper jelly can made ahead and stored in the refrigerator up to 7 days.

Cheddar Biscuits
1 cup unsalted butter, frozen
1 1/2 cups bread flour
1 1/2 cups cake flour
3 tablespoons sugar
2 tablespoons baking powder
1 teaspoon coarse salt
1 teaspoon baking soda
1 1/3 cups buttermilk
2 cups shredded yellow cheddar cheese
1/2 cup clarified butter, warmed
Sea salt, to taste

Preheat oven to 375°F. Line baking sheet with parchment and set aside.

Grate frozen butter using a food processor with shredding disk or cheese grater. Set aside. Whisk bread flour, cake flour, sugar, baking powder, salt, and baking soda in large mixing bowl. Add frozen shredded butter and whisk until butter is evenly distributed. Add buttermilk and shredded cheese and stir with spoon until soft dough forms.

Transfer dough to a floured surface and roll into 1/2-inch thick rectangle. Fold dough into thirds and roll to flatten slightly. Repeat 3 times. Roll dough to 1/2-inch thickness. Cut into 3-inch squares. Place on prepared baking pan.

Bake for 14-15 minutes, until tops are golden and the bottom of the biscuits begin to brown.
Remove from oven and brush with warm clarified butter and sprinkle desired amount of sea salt on top.

Woody in Rodeo Roundup BBQ

Woody riding Bullseye

The decor in Rodeo Roundup BBQ in Toy Story Land is amazing. Much like Toy Story Mania, you enter the world of Andy's toys as if you were a toy as well. And, of course, Andy has added a few of his own special touches,  like this drawing of Woody riding Bullseye.

Chocolate-Hazelnut Lunch Box Tart Recipe From Woody's Lunch Box

I love the food at Woody's Lunch Box in Toy Story Land. The sandwiches are delicious and the Lunch Box Tarts are a delightfully sweet treat. Here's the recipe from Disney for the Chocolate-Hazelnut Lunch Box Tart.

Chocolate-Hazelnut Lunch Box Tart

4 cups all-purpose flour, sifted
1/2 cup sugar
1/2 cup brown sugar
2 1/4 teaspoons coarse salt, divided
3 sticks unsalted butter, chilled and cubed
1/4 cup coconut oil
3 eggs, divided
10 Tablespoons water
1/2 cup chocolate-hazelnut spread
  • Combine flour, sugar, brown sugar, 2 teaspoons salt, butter, coconut oil and two of the eggs in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium speed until combined.
  • Add water and mix on low speed for one minute. Increase speed and blend until dough is smooth. Do not overmix.
  • Divide dough into 2 even balls and wrap in plastic wrap. Rest in refrigerator for 45 minutes.
  • Preheat oven to 375° F.
  • Mix remaining egg and 1/4 teaspoon salt in a small bowl and set aside.
  • Lightly flour a large cutting board and roll first ball of dough into 1/4 inch thick rectangle. Cut into eight 2x6-inch rectangles.
  • Place rectangles on a baking sheet lined with parchment paper. Brush with reserved egg wash. Spread 1 Tablespoon of chocolate-hazelnut spread on each rectangle.
  • Roll remaining ball of dough into 1/4-inch thick rectangle and cut into eight 2x6-inch rectangles. Place on top of chocolate-hazelnut covered rectangles and seal edges with a fork. Brush top of tarts with egg wash.
  • Bake for 17 minutes, until golden brown. Cool completely.

Icing & Garnish

1 cup confectioners sugar
2 Tablespoons milk, divided
1 teaspoon lemon juice
4 strips bacon, cooked and crumbled
  • Mix sugar, 1 Tablespoon of milk, and lemon juice in a small bowl. Slowly add remaining milk until icing is smooth and spread easily, but is not runny.
  • Spread icing on each cooled tart and top with bacon pieces.

Alien Swirling Saucers

As I'm sure you've noticed, I love the Little Green Men from the Toy Story movies. That's probably why I love riding the Alien Swirling Saucers in Toy Story Land. They're so cute! The ride is Pizza Planet themed and even includes "The Claw!"

Oooooooooooohhhhhh, The Claaaaaawwwwwww!

Toy Story Treats At Hollywood Studios

Toy Story 4 is just around the corner, so fun new Toy Story inspired treats have been popping up at Hollywood Studios. This Forky eclair has an edible topper that declares "I'm homemade." It's filled with an orange cream over a chocolate ganache. It may be my new favorite Disney dessert because it's very orangey but not overwhelmingly sweet. The Forky eclair can be found at Backlot Express.

The angry Hamm cookie is hilarious! It's two giant sugar cookies around a chocolate ganache with sour cherry filling in the center. The whole cookie sandwich is dipped in pale pink coating with a modeling chocolate nose. It's sweeter than I'd like, but still very good. And it's huge! Definitely one to share. The angry Hamm cookie can be found at The Trolley Car Cafe.

This last Pixar inspired treat can be found at Woody's Lunch Box in Toy Storyland. It's a blueberry and lemon Lunch Box Tart with a Luxo ball decoration. The tart is very fruity and not super sweet. I really enjoyed it. Which Toy Story treat will you try?

Disney
